So…I’ve lapsed on my meal planning which led to an added night of takeout and that feeling of stress that comes with not being on top of things…so this morning I took a look at what was in my fridge and freezer, pulled out my cookbooks and magazines and got to work!
After coming up with the week’s meal plan-
Monday – chicken piccata with lemon rosemary roasted potatoes and sauteed swiss chard.
Tuesday – salmon with fennel, red onion and tomatoes
Wednesday – pasta with fresh tomato sauce
Thursday – zucchini, spinach and brown rice soup with salad and fresh baked bread
Friday – pizza night!
I made a batch of arugula and potato soup which will be good for some lunches this week. Feeling much better and more in control. So now it’s time to get dinner cooking! Would love to hear what you’re making for dinner!
